Champ with LeeksChamp with leeks is an Irish dish served during, but not limited to, the holidays. Champ is another name for mashed potatoes. The champ is topped with chives, pepper and butter. In a traditional Irish serving a spoon is used to make a well, called a lake, for the butter, which then flows over and spreads on the top of the potatoes.
