Radicchio is an acquired taste but once acquired you'll never leave it off your table again. All it takes is a soaking in ice cold water before using it as an ingredient and the bitterness will dissipate. This pizza includes gorgonzola, caramelized red onion, shredded manchego and mozzarella cheese. The added manchego ensures a good melt for the gorgonzola.
